All you need:

  • 200g basmati rice, washed and soaked for 15 minutes & drained

  • 5 cups water

  • 1 tbsp salt

  • 450g chopped protein/vegetable (e.g paneer, chicken, lamb)

  • 100g yoghurt*

  • Masalawaala Biryani Mix (50g)

  • 3 tbsp ghee* /oil

  • 1 onion, chopped

  • Handful of coriander and mint leaves

* can substitute with non dairy alternative

5 simple steps:

  1. Make a marinade with Masalawaala Biryani Mix  & yogurt, then smother your chosen protein/vegetables with this marinade.

Keep aside for at least 20 minutes.

  2. Boil the water, add the salt and 1 tbsp oil. Add soaked rice and cook for 4-5 minutes. Remove from the heat and drain water completely.

  3. In a frying pan, heat remaining oil/ghee. Add onion and sauté until golden brown. Add marinated protein/veg and cook for 10-15minutes or until protein becomes tender.

  4. Place the mixture in a heavy bottomed casserole dish/pan; spread equally completely covering the bottom, sprinkle mint & coriander.

Spread the rice over your protein/vegetable & add 2 tablespoons of water.

  5. Cover with a lid and cook in oven at 1800 C for about 15 minutes or until the rice is fully cooked.

    Garnish with coriander

Serve hot with cool mint raita or plain yogurt

Our tips:

Add a touch of royalty to your biryani by infusing a pinch of saffron with a little lukewarm milk & add to the rice layer of biryani (instead of water) before cooking in the oven.

Leave to marinate for longer  (1-2 hours) to give a more succulent aromatic taste.

Why not add some crispy fried onions ontop before serving.
